Mustard seeds are amongst the nine major oilseeds cultivated in India, they come second, only after groundnut. The harvest usually takes place in March or April. The oil content in mustard is between 36 and 42 %. Indian mustard has a pungent flavour and is often used as a spice in the varied Indian cuisine. we are dealing with all types of mustard seeds.
BROWN MUSTARD SEEDS
Brown mustard seed is slightly stronger than brown mustard. Like most other seeds, black mustard seeds contains good amount of fatty oil (approx 30%), which is used extensively for cooking purpose. Brown mustard seeds possess a fiery flavor which rates in at 2 or 3 on a heat scale from 1 to 10.
YELLOW MUSTARD SEEDS
Yellow mustard seeds are fantastic for pickling, rubs, spice blends, or for making your own homemade mustard. Mustard seeds come in three varieties: yellow, brown, and black. Yellow mustard seeds (also called white mustard seeds since the sandy color can go either way) are used primarily in Europe and western Asia, whereas brown and black are used in india and the countries surrounding it
